Original recipe is from my great-grandmother, Ethyl Craig Jones, who made the best Parker House Rolls that tasted "like air". I don't quite have her skill, but these turned out delicious and was my most popular story of the year on social media so I added it here to share! I made a few modifications from the original recipe which called for "2 cakes of yeast" and "pints" instead of cups. I also replaced the sugar with natural honey in the dough. I LOVE the honey in these rolls!


When baking, sugar can be replaced with honey easily. As a general rule: 1 cup of sugar = 2/3 cup honey. Other liquids in the recipe may need to be slightly decreased.


Park House Rolls with Honey Butter:

Ingredients:

1 cup whole milk

2 pkg yeast

1/2 cup melted butter

1/4 cup local honey

2 eggs

1/4 tsp salt

4-5 cups flour

coarse sea salt


Honey Butter:

1/3 cup butter plus 3 TBS local honey




In saucepan, warm milk and butter until melted. In bowl of stand mixer: Combine milk, butter, eggs, yeast and honey. Let sit 10 minutes until yeast is bubbly. Add salt. Add flour a little at a time until soft dough forms and pulls away from side of bowl. Using dough hook, knead 5-10 minutes. Let rise 1 hour.





Make Honey Butter by stirring together melted butter and honey.


Roll dough onto floured surface 1/4" thick. Cut into strips. Roll strips up and dip into honey butter and place end side down in buttered casserole dish. Original recipe called for cutting into rounds with pastry cutter, dipping into butter, then folding in half, and let rise. I found this way to be a bit quicker and easier, but can be done either way.


Let rise again 30 minutes. Bake 20-25 minutes until light brown. Cool.


Drizzle with honey butter and sprinkle with coarse sea salt.
